Age is only part of the appeal: the Teviot hills shelter it from the prevailing cool easterlies, and relatively warm midsummers with low growing-season rainfall make an unusual pocket in a marginal climate. Pyramid Valley has managed the vineyard since 2019 without synthetic chemicals or fertilisers. Fruit was foot-stomped in the original shed, whole-bunch pressed, fermented wild on full solids, then given twelve months on lees and six more in old puncheons over a second winter.\u003c\/p\u003e\n\u003cp\u003eReductive and focused, with ripe orchard fruit, blossom, toasted hazelnut and salty minerals gliding into a chalky finish. Exuberant acidity means there is no hurry. Serve at 12 degrees.
