Whole bunches go in, only the most delicate fraction of the press run is kept, and the juice settles overnight unsulphured before being racked off gross lees to ferment spontaneously in stainless steel. Malolactic conversion follows and then stops of its own accord when winter arrives. Tom McCarthy describes 2023 as a rinse-and-repeat of 2022: poor flowering cut the crop hard, and a wet spring gave way to a settled ripening run with little disease pressure and unusually clear varietal definition.\u003c\/p\u003e\n\u003cp\u003ePerfumed with white flowers, nashi pear and citrus, with a maritime freshness and a generous but lip-smacking palate rippling with mineral tension.
