Hand-picked fruit was gently destemmed into small vats, fermented wild and pumped over lightly twice a day, with maceration running to 28 days before pressing to a mix of hogsheads and puncheons, around a fifth new. What has changed most since the family's T'Gallant days is the farming: organic viticulture, cover crops and a lighter hand with weeds and insects have brought better balance to the vineyard, and decades of working the same exposed, north-facing coastal block have taught the team what it wants to say.\u003c\/p\u003e\n\u003cp\u003eBright red cherry and raspberry with a savoury, spicy edge and a fine, persistent tannin line. Medium-bodied and long. Serve at 16 degrees.
