Most of it was destemmed to small vats, a portion fermented in barrel, and the wine pressed after 22 days to hogsheads with a quarter new for ten months. The block itself is dry-grown, north-facing and fully exposed at 30 metres above sea level, planted in 1994 by the Penfolds, mostly to MV6. Alluvial clay and red soils off Red Hill give the small, glossy bunches the estate prizes here.\u003c\/p\u003e\n\u003cp\u003eConcentrated and muscular by Mornington standards, with black cherry, plum skin, spice and firm, fine-grained tannin. Decant it and serve at 16 to 17 degrees.
