The early-flavouring Balnarring climate allows picking before the acidity slips. Whole-bunch pressing again yielded just 580 litres per tonne. Fermentation was natural, split 70 per cent stainless steel and 30 per cent barrel with half of those new, and the wine then sat four months on gross lees without stirring, the same decision made with every Grigio here and aimed at mineral tension instead of creaminess. Nothing was added and nothing filtered.\u003c\/p\u003e\n\u003cp\u003eConcentrated and taut, with white peach, citrus pith, almond and a stony, dry finish. There is weight enough for food. Ten to eleven degrees.
