This block was hand-picked on 20 March, pressed as whole bunches, settled, then racked with some solids into stainless steel and hogsheads, half of them new. The ferment ran on indigenous yeasts with no sulphur, and the wine sat on lees unstirred. Partial barrel fermentation has become part of the method, used to frame the flavour intensity these older organic vines now deliver. Racking and bottling came early, on 1 July, to hold freshness and the natural carbon dioxide of the ferment.\u003c\/p\u003e\n\u003cp\u003eCitrus and florals over a deep mineral core, driving through the palate with snappy acidity and a finely laced grip. Serve at 10 degrees and let it open.
