The model is Friuli and Collio, not the industrial version of the grape, and the winemaking follows: whole bunches pressed slowly across twelve hours, no sulphur at any early stage, spontaneous malolactic fermentation and no lees stirring at all. Leaving the lees alone keeps the chiselled natural freshness, which sets off the silky texture the fruit gives. Kathleen Quealy planted this variety on the Peninsula when nobody in Australia was interested in it.\u003c\/p\u003e\n\u003cp\u003eCrunchy pear aroma, plush mouthfeel, ripe stone fruit and acidity that stays discreet. This is Victorian Grigio on form. Serve at 9 to 10 degrees.
