This is all estate Gris grown on basalt-derived volcanic soils, 180 to 210 metres up on Main Ridge with Western Port below and the Bass Strait breeze running through the rows. The dry-grown vines were planted in 1997. Pressing follows an Alsatian model, with whole bunches loaded and extracted slowly over twelve hours, taking only the gentlest phenolics.\u003c\/p\u003e\n\u003cp\u003eRipe pear, red apple skin and honeyed spice with a mineral, faintly bitter finish and plenty of texture. Serve at 10 to 11 degrees, not colder.
