Getting Pinot across the line at this address takes small crops and constant attention in the canopy. The 2021 was fermented in three separate batches, each with a different share of whole bunches, and plunged by hand twice daily with a light enough touch that the intact bunches could keep fermenting inside their own skins. Pressed and settled, it went into François Frères and Billon hogsheads and barriques, a quarter of them new, with its fine lees for company.\u003c\/p\u003e\n\u003cp\u003eRed cherry and rhubarb sit over a leafy, spice-edged undertow, with fine tannin and acidity holding the line. Serve at 14 to 15 degrees.
