The red volcanic clay here is deep and the vines are mature, but the altitude and the exposure at Main Ridge make ripening a genuinely marginal proposition. In 2022, a small and intense crop left the berries badly outnumbered by stalks, so Tom McCarthy dropped whole bunches altogether and destemmed everything. Wild ferment in two-tonne vats, minimal plunging, a light press, then fourteen months on full lees in French hogsheads, one quarter new. Bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eBright and detailed, with dark cherry, forest floor and a fine dusting of spice, the tannins silky and the finish long. Fifteen degrees suits it.
