Whole bunches went straight to press and the juice settled overnight without any sulphur. A fifth of it spent just four weeks in François Frères puncheons, a stint chosen partly to take the edge off those barrels before the Pinot Noir arrived, and was then folded back into the stainless-steel portion.\u003c\/p\u003e\n\u003cp\u003eNashi pear, lemon pith and a faint almond bitterness, with a dry, gently grippy finish.
