The 2023 draws entirely on Moscato Giallo from the organic Balnarring vineyard, picked at 10.5 Baume so the perfume and acidity both survive the trip. Pressing was gentle and the yield deliberately low, which is where the filigree aromatics and the light-footed palate weight come from. Juice was settled and racked to begin fermenting, then tiraged and bottled immediately for the second ferment in bottle. Disgorgement was done by hand, one bottle at a time.\u003c\/p\u003e\n\u003cp\u003eYouthful and lifted, with muscat grape, orange peel and white flowers over a dry, clean finish. Serve it at 7 degrees.
