The 2024 comes wholly from Moscato Giallo grown in the organic Balnarring vineyard and was picked early, at nine Baume, to keep aromatic lift and acidity in play. Pressing was gentle and the yields low, which keeps the aromatics delicate and the palate finely poised. Once settled, the juice was drawn off and began fermenting, then was tiraged and bottled for its second ferment. Hand disgorgement followed, with no sulphur and no dosage added at any point. It is closed under crown seal.\u003c\/p\u003e\n\u003cp\u003eFinely detailed and energetic, with muscat perfume, citrus blossom and a dry, chalky close. Eight degrees.
