Tom McCarthy called 2023 a repeat of the year before, flowering again cutting the crop while the fruit that made it through was exceptional. Picking fell at the end of March, and the fruit was split into two ferments, one whole bunch and one destemmed. Pressing came after twenty-five days, and maturation ran across new barrels at twenty-five per cent with one, two and three-year-old wood making up the rest. Bottling followed ten months later.\u003c\/p\u003e\n\u003cp\u003ePerfumed and bright, with whole-bunch lift over pure berry fruit, spice and woodsy earth, savoury and fresh through a punchy finish. Serve at 14 degrees.
