Picking fell in mid-March, and the fruit went into two lots, one with a portion of bunches and the other destemmed, pressed after twenty-five days and matured across new barrels at a quarter, with one, two and three-year-old wood filling out the balance. Ten months on lees preceded bottling. Clone 777 fills this block, pruned to a single arched cane in rich volcanic red clay on a true north-facing slope, and it is never irrigated.\u003c\/p\u003e\n\u003cp\u003eCherry, cranberry and a little sous-bois, the tannins fine and the acid keeping everything upright. Serve at 14 degrees, and it will happily take a light chill on a warm day.
