Diego Rivera makes this in the traditional method, taking the cider through a second fermentation in bottle and turning and disgorging every one by hand, a laborious route he prefers for the depth and the soft, fine carbonation it delivers. He describes the house style as sitting between Asturias and England, firmly on the dry side, with the aromatics worked harder than a typical Spanish sidra and oxidation kept in check while the wilder, more complex notes are allowed through.\u003c\/p\u003e\n\u003cp\u003eDry, taut and faintly funky, with baked apple skin, lemon and a savoury, cidery bite under fine bubbles. Serve cold, around 7 degrees, in a wine glass.
