Gorvia is a 1.2-hectare site in the north-western Pazo de Monterrei subzone, near Monterrei Castle, which he took over some decades ago and has partly replanted using massale cuttings from the ancient A Trabe mountain vineyard. The vineyard is farmed on biodynamic principles, on a slope of slate and schist with a high iron content at four hundred metres. Where the Gorvia Tinto blends several varieties, the Blanco is all Doña Blanca. It is fermented in mature 1,500-litre oak foudres, a third of it on skins, then aged eleven months in barrel with partial malolactic conversion and two winters in stainless steel.\u003c\/p\u003e\n\u003cp\u003eA white with the weight to sit at the table rather than before it, and one that ages.
