Mateo has worked here for close to three decades and has become one of north-west Spain's most respected growers, assembling a collection of old, dry-grown parcels and replanting some varieties with massale cuttings taken from the ancient A Trabe mountain vineyard. Gorvia sits near Monterrei Castle in the north-western Pazo de Monterrei subzone, a slope of iron-rich slate and schist at 400 metres, farmed on biodynamic principles. The white is made almost entirely from Doña Blanca, a local variety capable of real structure when yields are low. It is fermented in mature 1,500-litre oak foudres, roughly a third of the fruit on skins, then aged in barrel with partial malolactic fermentation for eleven months, after which the wine rests two winters in stainless steel before bottling.\u003c\/p\u003e\n\u003cp\u003eAlready expressive but worth five to eight years in the cellar.
