Quinta do Noval, in the Cima Corgo above the Pinhão valley, makes a Colheita only in exceptional years, setting aside lots with the structure to take long cask ageing and raising them in cascos, old 640-litre casks that allow slow oxidative development and gradual evaporation. When the house judges a wine ready, usually after about fifteen years, part of the stock is bottled and the remainder is left in barrel for future releases.
