The base is Espadín agave, pit-roasted over wood and stone in the traditional manner, crushed, fermented wild in open wooden vats and then distilled twice in alembic stills. For this bottling, home-roasted beans are added to the finished spirit and left to rest for two weeks before a third and final distillation, so the flavour is carried through the still rather than added as a sweetened extract. The result has nothing in common with a commercial coffee liqueur: it reads unmistakably as mezcal, with a balance of minerality and wood smoke, suggestions of chocolate and caramel, and a citric sourness from the beans. The nose is deceptively dry and the palate creamy, round and viscous, with a bitter edge on a long finish that stops it cloying.\u003c\/p\u003e\n\u003cp\u003eDrink it neat at room temperature in a copita, in small pours, or use it in an Oaxacan old fashioned.
