The grapes came from Grove Estate, just east of the town of Young and one of Bryan Martin's regular Montepulciano sources. Destemmed whole berries went into open-top fermenters and sat there four weeks, plunged each day, then were given a first year in one to three-year-old puncheons followed by a second in two-thousand-litre Stockinger foudres. Very few Montepulcianos anywhere get a full year in Stockinger, as Martin has pointed out, and he rates the variety as one of the most dependable performers in Hilltops.\u003c\/p\u003e\n\u003cp\u003eDark plum, black olive and dried herb, with substantial but well-mannered tannin and a savoury finish. Serve at 16 degrees.
