Fruit came from three Hilltops sites of differing geology, Bit of Heaven, Moppity Park and Freeman. It was fermented and then sealed up on skins for four months, pressed back to cask, and moved to foudre for a further thirty months before bottling in February 2026. That is nearly three years in wood, and Bryan Martin rates the result among the best wines Ravensworth has released and the clearest expression of the variety he has made, leaning firmly towards the savoury end of the variety.\u003c\/p\u003e\n\u003cp\u003eDried cherry, tar, rose and woodsmoke, with tannin that is long and persistent and acidity to match. Serve at 17 degrees, decanted well ahead.
