After fermentation finishes, the vessels are topped, sealed and left entirely alone for seven months before the wine is pressed off skins. The blend runs eighty per cent Pinot Gris with ten per cent each of Gewürztraminer and Riesling, mostly from twenty-five-year-old vines on granite at 650 metres, hand-picked in mid-March. Fermentation ran on skins across Italian concrete vessels of 1250 litres and ceramic amphorae of 750, hand-plunged once daily until the peak of ferment, at which point everything was sealed up. After pressing the wine went back to vessel for four months, then to one-year-old thirty-hectolitre Stockinger barrels for a further year.\u003c\/p\u003e\n\u003cp\u003eAmber-tinged, with dried apricot, rose water, orange peel and a dry tannic pull that makes it behave like a light red. Serve at 13 degrees.
