The fruit went in as whole berries to a 1250-litre Nico Velo concrete pyramid, stayed six weeks on skins, then spent twelve months maturing in the same vessel. Concrete throughout means no oak flavour is added.\u003c\/p\u003e\n\u003cp\u003eExpect a dry, red-fruited Sangiovese with cherry and savoury herb, bright acidity and the chalky tannin the grape is known for.
