All the fruit is grown in Hilltops, a region whose consistency has drawn Bryan Martin back year after year. Soils vary from site to site but share a granite base cut through with windblown clay sediments, and the vineyards all sit between 500 and 600 metres. Fermentation was as whole berries in small one-tonne fermenters, and after four weeks on skins the wine was pressed to puncheons and barriques for fifteen months, long enough to settle the tannins without stripping the fruit.\u003c\/p\u003e\n\u003cp\u003eRed plum, dried fig and leather with a savoury, faintly smoky finish, the tannin supple and the acid lively. Serve at 16 degrees.
