This is a more serious Pinot in the Redbank range. Fermenting with stalks adds spicy tannin and structure, and the wine is then aged in barrel. Cedar, spice and strawberry lead the aromas, while the long palate combines strawberry fruit with firm, spicy tannins. The acidity is entirely natural, giving a crisp, well-structured finish that should carry the wine well in the cellar.\u003c\/p\u003e\n\u003cp\u003eServe at around 15 to 16 degrees. Roast duck, lamb rack, beef bourguignon or a mushroom tart will suit its structure.
