All of the vineyards are certified organic. Most of the juice was fermented with natural yeasts in tank, with some parcels going into the estate's oval Doppelstück casks, the large old oak vessels traditional in the Pfalz, which allow a slow exchange of air without adding oak flavour. Even at this level the wine is given six months on its gross lees, which builds texture and weight. There was no pumping at any stage and sulphur additions were kept very low.
