Polish Hill River has thin topsoil over broken slate, which forces the vines to struggle and gives a tighter, more austere wine than the limestone-based sites at Watervale. The fruit is whole-bunch pressed, fermented cool and bottled dry without oak.\u003c\/p\u003e\u003cp\u003eServe at 8 degrees with oysters, sashimi or a citrus-dressed salad.
