The Gräfenberg, the 'hill of the counts', has been used to designate Robert Weil's finest wines since the site was classified Weinlage 1 Klasse in 1867. It holds the estate's oldest vines, up to eighty years of age and mostly on their own rootstock, and although Weil could release Grosses Gewächs from three of its single vineyards, Wilhelm Weil restricts the designation to this one. Picking is by successive selective passes, and the wine is fermented dry and raised for around ten months on its lees in large neutral Stockinger Doppelstück casks, which lend texture without oak flavour.
