Much of the reason lies in the mountainous, rocky setting of the Kiedricher Berg vineyards. Gräfenberg is steep and stony, with thin soils over phyllite slate, and it holds warmth into the autumn while the altitude and airflow keep nights cool; that combination allows fruit to be picked at Spätlese ripeness without losing the acidity that keeps sweetness from cloying. Grapes are selected by hand in successive passes, pressed gently and fermented slowly, and the ferment is left to stop with natural residual sugar in the wine.\u003c\/p\u003e\n\u003cp\u003eLovely young and capable of twenty years or more, it works with fruit tarts, foie gras, mild blue cheese or spiced Asian dishes.
