The Rheingau's reputation for sweet Riesling was built on wines of exactly this kind, harvested late and left with their natural sugar rather than fermented dry. Weil's picking teams, which can number seventy at harvest, work through the slope repeatedly to take fruit at the right moment; the grapes for this Spätlese were harvested without botrytis influence, which keeps the wine clear-cut rather than honeyed. The analysis tells the story of the balance: 9% alcohol, 9.1 g\/L acidity and 88.5 g\/L residual sugar, so the sweetness is held in tension by the acidity rather than sitting on top of the wine.
