The Roc Breïa vines face west on a windy site, so disease pressure is low, and the Chardonnay is drawn from plantings dating to the mid-1940s and the mid-1970s. In the cellar the approach is simple: whole-bunch pressing, fermentation in used 500-litre barrels, bottling without filtration and a single small addition of sulphur at bottling amounting to 20 mg\/L. Théo Dancer has chosen to label the wine Vin de France instead of taking the Mâcon-Bray appellation, which frees him from restrictions on picking dates. The wine is juicy and punchy, notably fresher and racier than the region's reputation would suggest.\u003c\/p\u003e\n\u003cp\u003eDrinking well on release and holding four or five years in magnum.
