The Roc Breïa vines face west on a windy site, which keeps disease pressure low, and the Chardonnay comes from plantings dating to the mid-1940s and the mid-1970s. Théo Dancer keeps the cellar work simple: whole-bunch pressing, fermentation in used 500-litre barrels, bottling unfiltered, and the only sulphur addition made at bottling, a very small 20 mg\/L. Rather than claim the Mâcon-Bray appellation, Dancer labels the wine Vin de France, which leaves him free to pick when he chooses rather than to a set date. The result sits well outside the usual Mâcon template.\u003c\/p\u003e\n\u003cp\u003eDrink over the next two to four years.
