The Roc Breïa vines were planted between 1970 and 1985, a touch younger than the estate's Chardonnay. Fermentation uses about 50 per cent whole bunches, and the wine is then raised in used 500-litre barrels. Dancer makes a strict barrel selection, setting aside anything that does not meet the mark before the final blend is assembled. The approach is the same earth-to-glass method used for the wines under the Vincent Dancer label: no added yeast, very low sulphur and no filtration. The result is a pure, finely tannic Pinot Noir with real length, and it responds well to air.\u003c\/p\u003e\n\u003cp\u003eDrinking now and holding for five to eight years, more in this format.
