Pinot Noir has a long history in this part of southern Burgundy, even if Chardonnay now dominates the plantings, and the clay-limestone soils here suit it. The Roc Breïa Pinot vines were planted between 1970 and 1985, a little younger than the Chardonnay, on west-facing slopes where the wind keeps disease pressure low. Dancer ferments with roughly fifty per cent whole bunches, then matures the wine in used 500-litre barrels, making a rigorous barrel selection and leaving out anything that does not meet the mark before the final blend is assembled. The style is deliberately elegant rather than extracted, and it makes a good argument for what the Mâconnais can do with the variety.\u003c\/p\u003e\n\u003cp\u003eDrinking well now, though it opens up considerably with air, so decant.
