This historic family estate, which dates from 1841, has a parcel there and treats it as its signature wine. The grapes are all Nebbiolo, and the winemaking follows local custom: a long, gentle fermentation on skins and slow maturation in large casks that soften the tannins without adding strong oak flavour. Alessandro Locatelli, a descendant of the founder, oversees the vineyards and cellar.\u003c\/p\u003e\n\u003cp\u003eA magnum is the ideal format for long ageing and for a table of six or more. Decant well ahead and serve at 16 to 18 degrees with roast lamb, osso buco, a slow-cooked ragù or truffle pasta.
