Once a blend of two terroirs, Terres Chaudes is now drawn entirely from Poyeux, from vines averaging about 50 years old on the coteau, where a very shallow topsoil sits directly on limestone bedrock. Thierry Germain farms biodynamically. The fruit is fully destemmed and fermented in cement, with some foot treading, then matured in neutral 60-hectolitre wooden vats so nothing comes between the site and the glass. The wine carries Poyeux’s ripe berry, spice and mineral-charged fruit, but the frame here is unusually elegant: pure, bright and floral, with a silky palate sculpted by limestone-derived freshness.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth eight to ten years.
