Poyeux is one of its most celebrated sites, best known through the Clos Rougeard bottling. Thierry Germain has farmed Roches Neuves biodynamically for many years, and Terres Chaudes, once a blend of two terroirs, is now drawn solely from this slope, where the topsoil is very shallow before the roots reach limestone. The vines average about fifty years. All the fruit is destemmed and ferments in cement with some foot treading, after which the wine matures in 60-hectolitre neutral wooden vats.
