Aszú berries, shrivelled by noble rot, are gathered into tubs and the weight of the fruit alone presses out a syrup so rich in sugar that fermentation barely proceeds; the finished wine typically carries several hundred grams of residual sugar per litre and only two or three degrees of alcohol. It ferments for years rather than months, and is produced only in seasons where botrytis arrives in sufficient quantity.
