No herbicides, no chemical fertiliser, ever. Eben Sadie rates it among the great Chenin sites anywhere, and what makes it remarkable is that somewhere this warm and dry still gives wine with such texture and cut. Whole bunches go into the basket press, the juice heads straight to old casks for a wild ferment, and after twelve months on lees the blend returns to those same casks and is bottled straight from foudre.\u003c\/p\u003e\n\u003cp\u003eExpect quince, dried pear and beeswax over a salty, stony core, with a long dry finish that keeps building. Serve at 12 degrees in a decent-sized glass.
