By mid-December the team pulled leaves from around the bunches to let more sunlight in, having traced a green, herbal streak in earlier vintages to heavily shaded fruit, and they destemmed roughly a third of the crop instead of going almost entirely whole-bunch. The site itself is unchanged: east-facing decomposed granite at about 780 metres, dry-grown, ungrafted, in the pass once patrolled by the piekeniers who gave the wine its name. Fermentation and ageing take place in concrete only, with no oak anywhere in the process.\u003c\/p\u003e\n\u003cp\u003eThe result is primary and bright: red cherry, pomegranate, a dusting of white pepper, and a finish that stays savoury. Serve at 15 degrees.
