Syrah makes up about a quarter of the 2021, with Mourvedre, Grenache, Carignan, Tinta Barocca and Cinsault filling out the rest, and the growing share of those four has added depth to the tannins. Fruit comes from eleven vineyards across Paardeberg, Kasteelberg, Malmesbury and Piquetberg, on seven soil types. The magnum slows everything down, so expect the format to add years to the drinking window.\u003c\/p\u003e\n\u003cp\u003eDamson, dried fig, iron and scrub, with tannin that is firm but polished and a long, dry close. Open it an hour ahead and serve at 16 to 18 degrees.
