Eleven vineyards contribute, on seven different soils, from Paardeberg granite through slate, gravel and sandstone. Most are old, dry-grown and stingy. In the cellar the fruit is largely destemmed, fermented in one enormous open vat for about three weeks, then basket-pressed into mostly old French oak. It has been an icon since its first release in 2000, though that was never the point.\u003c\/p\u003e\n\u003cp\u003eRestrained for its size: red and black plum, fynbos, dried orange peel and iron, with tannin that grips lightly and lasts. Decant an hour ahead, serve at 17 degrees.
