Eben Sadie credits the rising share of those last four with the tannin depth and the clearer fruit. Yields are low across eleven parcels, most of them old vines, and seven soil types are represented. After three weeks on skins in a single open fermenter, the wine is basket-pressed to old barrels, spends a year on lees, then moves to seasoned foudres to finish.\u003c\/p\u003e\n\u003cp\u003eAromatically savoury, with dark cherry, tapenade, pepper and dried scrub, then a long, mineral finish. Give it air and serve at 16 to 18 degrees.
