A sorting team of twenty-five throws out somewhere between eight and fifteen per cent of the crop before anything reaches the fermenter. Three weeks on skins, a basket press, then French oak barrels with less than five per cent new wood, a year on lees, and a final stretch in seasoned oval casks.
