Most are planted on decomposed Paardeberg granite, four on sandstone, and most pass the thirty-five-year mark, the oldest dating to 1935. Even Eben Sadie's own younger plantings are held to 30 hectolitres per hectare. Whole bunches go through a vertical press straight into clay amphorae and 725-litre concrete eggs, then into large foudres, with the full cycle running two years before an unfined, unfiltered bottling. The magnum only extends the runway.\u003c\/p\u003e\n\u003cp\u003eBroad and textural more than racy, with dried apricot, fennel seed, honey and a phenolic grip that carries the finish. Serve at 12 to 13 degrees in a big glass.
