Granite is the common thread, though four sites lie on sandstone, and the oldest planting goes back to 1935. Everything is pressed whole into amphora and concrete egg, then raised in big foudres over twenty-four months and bottled with no fining or filtration. The freshness here is phenolic, not acidic, which is what separates it from the single-vineyard bottlings.\u003c\/p\u003e\n\u003cp\u003eDeep and savoury, with dried pear, hay, toasted nuts and a grippy, salty finish that lingers.
