Most parcels are granite, four sandstone, and the oldest vines were planted in 1935. Whole bunches go through a vertical press into clay amphorae and 725-litre concrete eggs before twenty-four months in large foudres, then bottling without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eExpansive and dry, layered with baked apple, salted citrus, dried herbs and a stony, mouth-coating finish. Serve at 13 degrees, and do not rush it.
