Around half the crop goes in as whole bunches to an old open-top wooden fermenter, foot-trodden once or twice daily to keep the ferment moving, and stays a month on skins before a small basket press sends it straight to conical casks nearly thirty years old. The snake the wine is named for is native here.\u003c\/p\u003e\n\u003cp\u003eDelicate but not slight, with sour cherry, pomegranate, dried thyme and a fine, dusty grip. Fifteen minutes in the fridge suits it, then serve around 15 degrees.
