The soils are sandy and chalky, close enough to the albariza of Andalucia that Eben Sadie makes the comparison himself, which explains why Palomino thrives. Rainfall barely reaches 300mm a year, so yields sit around 26 hectolitres per hectare and the fruit arrives concentrated and salty. Picked and pressed together, the grapes co-ferment in old casks. Sadie called the 2021 one of his most linear bottlings.\u003c\/p\u003e\n\u003cp\u003eRazor-sharp and low in alcohol, with lime, sea spray, green apple skin and a finish that cuts clean. Serve cold, 10 to 11 degrees.
